In Spanish there are two verbs that correspond to the English verb to be. These two verbs are ser and estar.
An easy way to differentiate is that ser is used to describe permanant characteristics of people, places and things. Estar is used to describe temporary conditions/situations that refer to people, places and things.
If we chose to use estar then it's because we are describing the temporary condition of the tomato. The condition will change.
